Recipe of the Week: Gingerbread Cookies

Nothing says “Jul” like gingerbread cookies. In Sweden, the traditional holiday variety is a “pepparkaksgubbe” (gingerbread man). Here is the classic pepparkakor recipe. This generous recipe makes several dozen cookies depending on the size.

2 1/2 dl brown sugar
3/4 dl light syrup (we carry this in the store, or use corn syrup)
3/4 dl water
150 g butter
1 tablespoon ground cinnamon
1 tablespoon ground nutmeg
1 teaspoon ground cloves
6 dl all purpose flour (+ extra for rolling out)
1 1/2 teaspoon baking soda

Instructions:
1. Combine brown sugar, light syrup, and water in a saucepan and bring to a boil.
2. Remove from heat and add the butter and spices on top. Do not stir!
3. Allow mixture to cool, then add the baking soda and flour.
4. Wrap the dough in plastic and chill overnight.
5. Remove dough from refrigerator and knead gently until pliable.
6. Roll and cut cookies.
7. Bake 6-8 minutes.

Tip: Bake a test cookie first. Work more flour into the dough if the cookie does not hold its shape.
